凉拌粉丝 (Chinese Vermicelli Dish)

Ingredients

  • Vermicelli
  • Cucumber
  • Carrots
  • Coriander
Sauce:
  • Garlic (crushed)
  • Chilli flakes
  • 1 tbsp light soya sauce
  • 1 tbsp dark soya sauce
  • 1 tsp sugar
  • 1 tbsp sesame oil
  • 1 tbsp sichuan pepper oil
  • 1 tbsp oyster sauce
  • 4 tbsp black vinegar

Method

  1. Chop the cucumber and carrots into long thin strips (成丝). Finely chop the coriander.

    • Optionally cook the carrots briefly if you don't like eating them raw
  2. Cook the vermicelli in hot water then rinse with cold water

  3. Fry the garlic and chilli flakes in hot oil for a minute

  4. Mix together all of the sauce ingredients (included fried garlic + chilli)

  5. (Just before serving) Pour the mixed sauce ingredients over the vermicelli, carrots, cucumber + coriander

  6. Mix well and serve!
